Toby’s Birthday Bacardi Rum Cake

 
1c. chopped walnuts, optional
1 yellow cake mix with pudding
3 eggs
1/3c. vegtable oil
1/2c. water
1/2c. Rum ( lt. or dark)
 
     Grease & flour a bundt pan, if using nuts sprinkle over bottom of the pan.  Mix all the remaining ingr. & pour into the pan.  Bake @ 325 for 50 – 60 min. or till toothpick comes out clean.  Cool on rack for about 10 min. & then invert onto the plate you are going to serve it on.  Prick top & spoon & brush glaze over.  Let the cake absorb some glaze & repeat until the glaze is used up.  This is best made the day before serving so that all the flavors can meld together.  Enjoy!!!!!
 
Glaze:
1/2c. butter ( no substitues)
1/4c. water
1 c. sugar
1/2c. Rum  (lt. or dark)
 
     Melt butter in saucepan. Stir in water & sugar, boil for 5 min. stirring occasionaly, be careful it doesn’t boil over or you’ll have sticky mess.  Remove from heat & stir in Rum.  Glaze cake while glaze is still warm.
